Mango Omelette with Mango Creme Liqueur Drizzle

A great Sunday morning brunch.



  1. Beat eggs, cream, sugar, and salt lightly in a medium-sized bowl.
  2. Melt the butter in an omelet fry pan (or small fry pan) over medium high heat, tilting the pan to coat the bottom and sides.
  3. Pour the egg mixture into the pan.
  4. Cook, lifting the edges of the set mixture to allow uncooked egg to flow to the bottom fo the pan.
  5. Continue to cook until the omelette is set, but the top is slightly moist.
  6. Layer the mango chunks over the top of the omelette and cook for 30 seconds.
  7. Fold like an envelope and slide onto a serving plate.
  8. Drizzle the Mango Crème Liqueur over the top and serve immediately.
